My Salsa Story

Yesterday afternoon I decided I wanted to make some salsa verde to go with cheese quesadillas for last night's dinner. I scouted out what seemed to be a well-received recipe online and stopped by the store on my way home for the ingredients: tomatillos, shallots, cilantro, a jalapeno and some green chiles. I knew I had garlic at home. I immediately set to work figuring salsa would be an easy creation but I didn't keep a few things in mind, like not handling the jalapeno with my bare hands for example. I also added too much of said jalapeno. The recipe called for 3 shallots which I am deeming way too much. Oh and I forgot to add the garlic. When it was all said and done I had a too spicy, too onion-y salsa that was missing some flavor. I realized the garlic mistake this morning. Jake is adding it in so he can have some for lunch today but for me, it's done. I ate this salsa around 6:45pm last night and now, at noon the next day, I STILL have a horrible taste in my mouth and a slightly upset stomach. Oh and I had a small paper cut on one of my fingers that is now irritated as a result of my pepper handling even though I washed with soap like 10 times. (image from www.growquest.com)

I apparently need to learn a thing or two about making salsa at home.
